Pocket Donuts started with Henry Cai—better known as Fat Head Henry—whose whole career has been built on turning simple ideas into food people obsess over. From 3 Little Pigs to Eat3LP, Henry made his name by pushing flavor, doing everything by hand, and building a loyal following in Chicago one bite at a time.

In 2024, he took that same mindset into a new lane: a small, square donut with big flavor. What started as kitchen tests quickly caught fire. Friends tried them, posted them, and the buzz spread faster than expected. Orders showed up before the brand was even official. Every batch was fried fresh, filled by hand, and packed with the same appreciation Henry built his whole career on.

With Chicago behind him and a product that stood out on its own, Pocket Donuts went from an experiment to a real movement. Henry’s background, work ethic, and relentless creativity fuel the brand—and this is only the beginning.
